At 10 pm, I made an *emergency* pants run to the only place I knew was open…Targét. They hooked me up with some pants and in the morning, I rocked the interview. You’re now looking at a new Macy’s employee (whoop whoop)

After the interview, I hit up the hospital for a Tuberculosis test (required for volunteering). I’m supposed to be watching for a bump on my skin but all I see is a blue spot. I took a picture of  the spot but after reviewing them on the computer, I decided that close-up arm pics are gross & unnecessary.

I celebrated my job-landing like any other person would…

Then, I tried working on the new bloggie site.

I’m getting pretty frustrated with this blog transfer. All I’m trying to do right now is add a header to my site and I’ve had 3 different people tell me about FTP (whatever the heck that is) and that all I have to do is follow 20 steps and enter in a bunch of information that I don’t understand and really, it’s all so easy, don’t you see?! Ugh

Ok, I’m done.

*Apparently, everyone in this house last night was craving cheesy, tomato goodness. While my family went the pizza route, I went my own route…

Pizza Salad, anyone?

If you’ve never tried a pizza salad, you must! Into the bowl:

• Steamed spinach
• Grilled eggplant, mushrooms, zucchini, & bell pepper
• Pizza sauce
• Daiya cheese
• Amy’s Bistro Burger

Well, this is going to be an awkwardly brief, randomly published post because I hope to fix things out with the new site! *Fingers crossed*

*This morning, I was pleasantly surprised to find that I scored an interview for tomorrow (!) Hopefully, things will go well and I’ll no longer be jobless

After finding this out, I went downstairs and witnessed a battle…

*On my last day as a bum, I hit up the grocery store a couple different stores to re-stock my food supply for the week. Looky what I stumbled across…

Raw Coconut Nectar. I don’t fully understand the claim that it’s “more nutritious than agave” but that’s not why I bought it anyway. Anything sweet that involves coconut is automatically good in my book

The taste was very interesting. It was definitely sweet but had a twang to it (if that makes sense?) I can’t describe it any better than I can describe the taste of honey or maple syrup. I liked it!

Question: Do you think I could wear black yoga pants to an interview and pass it off as dress pants?

But that being said, I am surprised happy my legs are feeling just fine today

*Yesterday, I had the pleasure of meeting up with the lovely Maya from American Gourmande! We went to a local Indian restaurant and chowed down on delicious vegetarian/vegan fare. I can’t tell you why neither of us bloggers took pictures…but I swear, it happened. It was nice to meet you Maya! We have to run sometime

Ever since that lunch, I’ve had curry on the brain. Please tell me I’m not the only one who fantasizes about curry.

So, I decided to make use of the butternut squash I had lying around and make a curried squash pie.

I used fresh, roasted squash but I’m positive it would be easier to used canned

I also had to veganize the recipe:

Crust

• 1 1/2 cups finely ground Nabisco Triscuits Rye & Oat Crispbread
• 3/4 teaspoon pepper
• 1/4 cup butter Earth Balance, melted

Filling

• 1 onion, minced
• 1 tablespoon olive oil
• 1 clove garlic, minced
• 1 1/2 teaspoons curry powder
• 1 teaspoon ground cumin
• 1 1/2 cups squash, puree
• 3 large eggs ener-g eggs
• 1/4 teaspoon cream of tartar
• 1/2 teaspoon salt
• 6 tablespoons grated parmesan cheese Daiya cheeze

(The full recipe is linked above). I haven’t actually tried a piece, but it smelled heavenly

I froze half the pie & plan on eating the rest throughout the week

While I was cooking, and accident occurred involving my finger   You would think it was caused by any of the 5 sharp knives I was using but oh no…

It was from these preschool scissors. Those things are weapons, I tell you.

Since I was on a roll with pie-making, I thought I’d whip up another pie, only sweeter –>

Pictured above is Happy Herbivore’s low fat cheezecake. Yet again, I haven’t tried any…but I’ll let you know how it turned out!

*Now I need to go drop some stuff off at the Salvation Army. My mom has been watching Hoarders, which has inspired her to de-junk the house.

Here’s a little glimpse into the conversation I had with my body today:

Mile 1:

Me- How ya feeling?

Body- Pretty good; it’s so nice outside

Mile 5:

Me- Watch… watch out for he squirrels! *eek* Excuse me, I thought I was in charge here??

Body- Well, you’ve been telling me to run for a while now, so I thought I’d just keep running. It’s the squirrels fault for not moving whilst I’m charging at them.

Mile 10:

Body- Ohhh, I get it….this is a test. Bring it girlie.

Mile 15:

Body- Ok, I think I passed the test. I’m really tired, can we stop?

Me- Nope, sorry.

Mile 17:

Body- Are you crazy?! Stop woman, please.

Me- It’s ok, you love it.

Body- No, no I don’t.

Me- Just tell yourself that.

Body- I’ll try…but Achilles has been whining in my ear for miles.

Me- Tell Achilles I’ll stop to walk again and stretch him out, but he’s gonna have to suck it up.

Mile 18:

Body- I cant take it…this hurts. When is it going to end?!

Me- Just a little longer! Hang in there.

Mile 20:

Me- We’re done! Thank you, thank you. You’re the best

Body- I’m very mad at you right now. I want you to give me a smoothie and lay me down on the couch. I’m not speaking to you.

Me- Will you still be mad at me in the morning?

Body- We’ll see…

*My body has decided it’s not mad at me anymore, but Achilles is being a brat and holding grudges. It’s fine, he has every right to. But the good news is, I finished my longest training run!

Oh, and Papa Run did his 20 miler today too so *congrats dad* You’re not as old as you think

Loads of pineapple.

The pineapple towards the bottom of the container was so ripe, it tasted sort of like a Pina Colada…if you catch my drift.

*A while back, Pom sent me some of their juice to sample (thanks Pom)!

I’m not a fan of juice for the same reasons I’m not a fan of white flour. But health reasons aside, juice in general is way too sweet for me. I tasted some & it was pretty good but I told my family they could have the rest. Someone has been loving them because they’re all gone

DessertOfThe.Day –>

Cinnamon cereal (from Whole Foods), coconut milk kefir, coconut-rolled dates, and a hefty scoop of homemade nutella.

*I’m still trying to get some kinks worked out with the new site, but hopefully it will be up & running sometime within the next week (?)! Have a good weekend everyone
